Stuffed Acorn Squash Recipe
This stuffed acorn squash recipe is so easy to make, extremely affordable, and very nourishing! It also can be gluten-free if you substitute out the bread crumbs for your favorite gluten-free alternative. Ingredients
2 Acorn Squash
1lb ground turkey
1/2 yellow onion
1/2 celery stalk finely chopped
1/2 apple diced
1 teaspoon dried thyme or rosemary
2 tablespoons breadcrumbs of choice
1/8 cup of pecans
1/8 cup of cranberries
1/4 cup grated parmesan
1/2 cup chicken stock
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
3 tablespoons of olive oil
1 teaspoon salt
1 teaspoon pepper
Instructions
Preheat the oven to 400
Cut the Acorn Squash down the middle (vertically if upright)
Remove the seeds with a spoon
With a pastry brush, coat the squash in olive oil and add salt and pepper
Place the squash in the oven, with the sliced halves facing upwards, and roast for 45 min to 60 min
While the squash is baking, heat up a skillet and add a tablespoon of oil
Add the ground turkey, and season with salt and pepper
Place the meat into a bowl
Add the onions and dried thyme or rosemary to the skillet and cook for 5 minutes
Add celery, apple, cranberries and pecans and cook for another 3 minutes
Put the meat back into the pan
Add chicken stock, salt, and pepper and cook for 3 more minutes
Stir in breadcrumbs and Parmesan cheese
Remove the squash from the oven and add th stuffing and bake for another 15 minutes
