The Best Pulled Pork Instant Pot Recipe
Anyone that knows me well, knows that I love my Instant Pot! It’s my most-used kitchen gadget and one of my favorite buys of all time. If you know me you’d also know that I love a good pulled pork sandwich. Honestly, I can’t even tell the difference between pulled pork made in an Instant Pot vs. a smoker, I think if anything it is less dry and more tender!
Living in Texas, pulled pork is such a great dish to be able to bring to get togethers and this full-proof recipe is always a hit. Even if you get some of the preparation or measurements wrong, it comes out great every time!
This pulled pork I love to pair with a brioche bun or put it in tacos. Or you can even have it plain with a side of mac-n-cheese or potato salad. It’s so versatile. One of my favorite things to do is add my homemade pickled red onions to it, it gives it a nice crunch and the acidity compliments the savory and sweetness of the pulled pork.

Ingredients
- 2 tablespoons brown sugar
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons cumin
- 1/2 teaspoon cayenne
- 2lbs pork shoulder, cut into 3 inch cubes
- 3 tablespoons olive oil
- 1/2 cup apple cider vinegar
- 2 cups barbecue sauce
- 2 cups broth of choice
Instructions
- Combine your dry ingredients – the brown sugar, paprika, garlic powder, onion powder, salt, pepper, cumin, and cayenne
- Cut your pork shoulder into 3 inch cubes then rub the dry ingredients on it
- Set your Instant Pot to the “sauté” setting (I usually set it to level 3)
- Add the olive oil to the Instant Pot and then add your seasoned pork shoulder cubes and keep flipping them until they are brown and a little charred on each side
- Take the pork out of the Instant Pot and scrape the brown bits loose from the bottom of the pot
- Add the pork back into the pot and add 1 cup of barbeque, the 1/2 cup of apple cider vinegar, and the two cups of broth
- Close the lid and turn on the pressure cooking feature for 40 minutes with the release set to “natural release”
- Once the pressure cooking has been completed, switch to “quick release”
- Open the lid, remove the pork and add the remaining barbeque sauce
- Add the pork to a bun or put on your favorite tacos and enjoy!
