The Best Pulled Pork Instant Pot Recipe

This is my favorite pulled pork recipe, it just comes out so tender, juicy, and flavorful. The meat falls apart so nicely when it’s done!

Ingredients

  • 2 tablespoons brown sugar
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons cumin
  • 1/2 teaspoon cayenne
  • 2lbs pork shoulder, cut into 3 inch cubes
  • 3 tablespoons olive oil
  • 1/2 cup apple cider vinegar
  • 2 cups barbecue sauce
  • 2 cups broth of choice

Instructions

  1. Combine your dry ingredients – the brown sugar, paprika, garlic powder, onion powder, salt, pepper, cumin, and cayenne
  2. Cut your pork shoulder into 3 inch cubes then rub the dry ingredients on it
  3. Set your Instant Pot to the “sauté” setting (I usually set it to level 3)
  4. Add the olive oil to the Instant Pot and then add your seasoned pork shoulder cubes and keep flipping them until they are brown and a little charred on each side
  5. Take the pork out of the Instant Pot and scrape the brown bits loose from the bottom of the pot
  6. Add the pork back into the pot and add 1 cup of barbeque, the 1/2 cup of apple cider vinegar, and the two cups of broth
  7. Close the lid and turn on the pressure cooking feature for 40 minutes with the release set to “natural release”
  8. Once the pressure cooking has been completed, switch to “quick release”
  9. Open the lid, remove the pork and add the remaining barbeque sauce
  10. Add the pork to a bun or put on your favorite tacos and enjoy!
